Priscilla Plamondon Lalancette's research is focused on Québec's culinary renaissance, which occurred after the Second World War and was strengthened during the Quiet Revolution. At the time, the determination of a new national identity was driven by the affirmation of the historical, cultural, linguistic and political differences of the only French-speaking stronghold in America and by its cuisine—a perspective that scientific research has yet to explore. Québec faced the twofold challenge of emancipation by finding inspiration in French cuisine to set its own gastronomy apart from Canada's and by releasing itself from French tutelage to affirm its culinary identity. The restaurant industry can draw on these findings to underpin Québec's culinary past and promote the singular development of Québec cuisine.
